I know, I know.....It's been awhile since I posted here. Sorry.

Decided to make some Salmon nuggies for gifts to a few of my fishing buddies. Not near enough but it's a start. Will be doing much more in the next couple weeks along with some cold smoked Albacore which the wife and I caught during this past fall.

This batch was using my very basic 4/1 ratio dry brine of dark brown sugar / non iodized salt. Brined for 4+ hours. Smoked for 3.5 hours at low temps using Alder and Apple pellets.

Cut up the night before brining.

Wow, fantastic! They look glazed; is that just from the brine? And I assume it was a dry brine?
 
Nice....I was a trout in a previous life and I'm..... Nah, I just like trout, steelhead and salmon. What size were those nuggets? I'm a dry cure guy, but how much water when using your 4:1 sugar/salt ratio?
 
Yes, as I noted in my first post of this thread, it is a dry brine. Very simple. The fish used was Chinook Salmon which we caught earlier this year.
