Made my best pulled pork to date for Christmas Eve. It was a huge hit. First time injecting a shoulder the night before cooking. Will have to do that more often. Used a Apple juice/Water/Brown Sugar/Salt/Soy Sauce/Worcestershire injection. Also ran the smoker at 275 instead of the usual 225-250 and it cooked quicker with no change in taste/tenderness.
Wrapped in foil after 5 hours for the final 3.5 hours.
Then wrapped in a towel and kept in a cooler for 3 hours until dinner time.
