Great meal for the family
I'm loving the texture of the sourdough. I can see the layers from the stretch and folds.

Great all home cooked meal there Rich.
And that is how the top should be , nice and golden cheese.

I can eat most lasagnas, but if im making it for me it is Mozza for all cheese, but that is me.

Ray , I normally go to 6 on this , but this was at a 5 . Cooked from raw in the dish really makes the pasta swell up .

Pesto in lasagna is new to me. At the suggestion of a coworker I tried making lasagna with sausage instead of GB and OMG absolutely no other way.
The pesto started with Ryan making a baked pasta dish . He wanted to use the same ingredients , but use them in a lasagna . Each on it's own layer .
It was a layer of pesto , a layer of bechamel , then beef and italian sausage with homemade sauce . Small amounts of mots .
Really good , but he doesn't add the egg , so it stays flat .

I normally do cottage cheese and mots . Not a big fan of ricotta myself , but forgot the cottage cheese .

That is basically the true original Alfredo sauce without the butter.
The Americanized version adds the heavy cream, I grew up eating the org version, it's my favorite by far.
 
Looks great! One of my favorite meals.
Thank you . Here's a simple replacement .
Bag (s) of frozen beef ravioli . We use Louisa .
Good quality jar of sauce . Mids or Rao's .
Layer the rav's with sauce in a pan . Add cheese or whatever you like .
We keep it just sauce , grate some parm on top at the end .
Bake it off in the oven ( ravs are frozen ) until it bubbles .
Eats like a cross between Lasagna and Cannelloni , leans towards Cannelloni .

Thanks Jeff . Had enough left to do it again on Friday . I normally do 2 out of that amount , and freeze one . You know it's good when they say " We should have this again tomorrow " Lol .
Do not pass go, do not collect $200, go straight to the lasagna.

This reminded me of something my grandmother and mother taught me. They always made the lasagna the day before we ate it. It allowed all the ingredients/flavors to come together.

Nice! I keep trying to get my wife to make lasagna for Thanksgiving or Christmas but you know, for some people its just not Thanksgiving or Christmas unless "fill in the blank"...and it's not lasagna. I do most of the cooking but she does make an excellent lasagna.

I turned my wife on to this many years ago. I fed her spaghetti made with Italian sausage and we never looked back. Everything in the tomato based Italian inspired lane is always Italian sausage, hot and spicy.

Lasagna is a bit like Chili in the sense that people have their sort of "must haves" or "oh hell no's"!

Thanks . That bread comes out fantastic . Makes great toast too . Changed it up some yesterday . More of a baguette . Softer crumb and crust . Used ripe starter , but no ferment .
Open bake . Great texture and flavor .

David , it works . Not sure where I got that from . Just mix a whole egg right in the cheese .
Just remember to toss any cheese you don't use .
Another cook , but you can see it's an inch below the top before baking .

This comes from eating at my wife's family on Christmas . Her Dad was full Italian , and her aunt used to do homemade ravioli , meatballs , sauce ,,,, the sauce is killer by itself . Bought the good sausage from the Hill section of St. Louis . Great meal , and that is Christmas to her side ,, and my kids grew up with that . It's a tradition , but sadly a lot of the main players agr gone now .

Thanks . It does take some work , but I'm setup pretty good for this stuff .
Key thing is to clean as you go . That way you have room to work , and not looking at a big mess .
