Did a nice beef tenderloin for Christmas dinner and it turned out great!! Had about half the loin left so refrigerated it and then sliced it on my meat slicer fairly thin. Used that on Friday to make beef sammies on toasted onion rolls with Swiss cheese with Horseradish cream sauce, lettuce and onion.

Had to melt that Swiss in the toaster oven. Always like to use the bagel setting so it only gets hot on top and helps keep the bun from getting too crumbly on the bottom.
