I have a gander mountain chipotle sausage mix that I received last year. On the instructions the mix says to add cure but I would like to keep the sausage fresh and not smoke it. Would the sausage still come out ok if it's not cured and smoked? Also if anyone has used this same mix let me know how it tastes?

You don't have to use the cure, but you'll need to hot cook these with a higher temperature than you would with cure.

Also, the meat will be grayish in color after cooking since the cure is also what gives sausage it's pink color.

I haven't tried that mix, but I'd bet that the addition of smoke would really be good with chipotle seasoning.
 
Thanks! They will be smoked but I like to freeze fresh sausage and smoke or grill them when I cook out. Think I'll go ahead and try a batch.
