Like it says above, chickens on a big sale. I know lots of folks who will appreciate a smoked chicken to stick in the reefer in case they get unexpected company or have a late night shopping. Plus so many single folks out there that live off sandwiches. Tis the season right?

I brine cured the chickens for approx. 36 hours and smoked at 220 to a IT of 163, using strickly apple. After they cool overnight I'll attempt to vac seal 'em.

As much as we all like to smoke, remember there are lots of folks out there who would really appreciate a fully cooked meal. You feel good, you smell good, remember Santa is watching!

I'll guarantee there is no rubbery skin and the juices are waiting to squirt out when just look at it while holding the knife.

Its not crispy, its not rubbery, its just smoked skin.

I did cure them. All the professionally smoked foul around here has a bit of cure. If I add a little cure now, they just seem to taste more right to me.

Two different racks. The higher up the more smoke it takes. I guess has something to do with the higher the temp the higher up it is. <shrugs>

Ah, I wanted to see if you managed to get them into vac bags.

LOL... actually last year I ended up using ziplocs, this year I did better. Yes those are vac-sealed this year, even with a hollow cavity. I should say, as we get older we assume too much, like we know whats going on.....LOL Put the chickens in the bag and use the "seal only". It still sucks it down, it just doesn't try and get a 30" vacuum LOL. Worked great!
