Chicken thighs smoked, grilled, enjoyed, then pulled for quesadillas

    Spiced them up with a little S&P and some salt free organic spice mix from Costco.


    Apple wood chunks, 250 in the Masterbuilt propane until they hit 150. 


    On to the Weber to crisp the skin and finish cooking:




    With fresh spinach and mashed sweet 'taters:


    Pulled the rest and had tacos and quesadillas for two nights:

    Thanks, y'all.  I did it again the other night, but added a light dust of turbinado sugar to the skin.along with the Costco spice and S&P.  The skin was much crispier, so it got sliced up and added back to the pulled bird meat.
