Hi!
Looking for a different flavor to grill chicken thighs !
Tired of the Italian dressing and bbq sauce . Grilling !?
We are suppose to get rain for the next few days ? AMEN! WE NEED IT!
Might have to use the oven in house ? Which is OK?
Any ideas ? I wanted to surprise the family with a different twist ?
Might do teriyaki with rice and beans ?

korean flavored bbq would be a small twist?
tacos
kabobs are great!
stir-fry (i use the pre mix bag from walmart it comes with sauce)
brined and smoked(you still have time)
pot pie is pretty easy
cook them shred and sauce
hot thighs instead of wings
chicken chili

Try this simple approach. Trim up the thighs a bit (leave skin on) place meat side up in a high rimmed dish. Season meat side with salt and beau monde. Stay with me here... micro for 13 min. This gets a lot of the fat rendered out. Now grill them seasoning the skin side with salt and beau monde. When you flip, baste with melted butter and lime juice. Usually flip 2-4 times for a total grill time of about 10 minutes.

- Grilled or not, with something as versatile as chicken, sometimes I start with unusual flavor constellations and work something up: [fennel-orange-garlic], [coffee rub-cayenne-chocolate or coffee-cardamom-cinnamon], [peanut butter-maple syrup-nutmeg], [harissa-ginger-lime], [dill-pineapple-pomegranate], [tomato-olive-oregano], [coconut-pumpkin-vanilla], [cranberry-goat cheese-cashews]... Depending on the ingredient (lime juice versus lime zest, for example), you can use it in the marinade, during the cook, and/or when dressing the finished chicken.
- Other times, I like to start with a region/cuisine and drill down from there: Greek (souvlaki or avgolemono), Indonesian (satay), Mexican (mole), Morrocan (bastila or tagine w/ preserved lemons), Filipino (inasal or tamarind), Lebanese (hashweh), Peruvian (aji verde), South African (peri peri), etc. Up to you to stay traditional or seek out unexpected bridges/variations.
- There is no shortage of closer-to-home ideas, either: Nashville hot, Buffalo chicken (sandwich, salad, dip, etc.), chicken-and-dumplings or other soups, chicken salad (make-your-own mayo), chicken gumbo, so many...

For me sometimes it's just a change in spices. I have a cabinet full of rubs and spices and I just change it up for any given cook. Sometimes I smoke, sometimes grill or in the oven or air fryer.

Firecracker Chicken
Rub:
3 Tbs Paprika
1 Tbs Freshly ground black pepper
1 Tbs Kosher salt
¾ tsp Brown sugar
¾ tsp Chili powder
¾ tsp Garlic powder
½ tsp Ground cayenne pepper

Chicken:
3½-4 Pounds skinless Chicken thighs or legs

Put them in plastic bag and sprinkle the spices in. Shake it up and leave in fridge for 2-3 hr (give a shake/rub every 30 min).

Grill 20 min then flip / then grill 5 min / flip then 5 min ; tot grill time ~ 30 min.
 
Simple Marinade:

Equal parts
Franks Red Hot Sauce
Lea Perrins Wostershire
Dales Seasoning (Soy Sauce)

Place thighs in a zip lock bag and marinade overnight.
I have marinaded them for a couple of days.
Comes out fine.

Hi there and welcome!

I'm with normanaj normanaj on the change of spices.
If you plan to do rice and beans you can go spanish rice and pinto beans and then fajita season and grill your chicken thighs.

Salt, Pepper, Onion, Garlic, Chili Powder, and a pinch of ground Cumin. Boom you have chicken fajita/taco seasoned grilled thighs.

It's easy and if you don't have those spices then you will now have them to make all kinds of Mexican or Tex-Mex dishes with them.

Just bough a family pack of thighs today. half of them go in the cure tomorrow.

the gang has some great ideas. I'm fortunate enough to be married to a self proclaimed wok master. any time Sam's or Bj's has boneless/skinless on sale i get a platter to stick away. some of our favorites are chicken Thai basil and general Tso's
I don't know the recipes but most ae internet available.
(I'm just the red meat protein dude here at our house)
