This has always been a favorite of mine. My parents would cook chicken over charcoal and sauce it up! We did it all the time. Growing up 12 miles from Lake Texoma we were camping and BBQ chicken (as we called it) was so easy and always so good. We still cook it at least every couple of weeks and some weeks it gets cooked more than once.
Nothing earth shattering or new, just one of my favorites.
For this round ...
Boneless, skinless chicken thighs marinade in Balsamic vinegarette Italian dressing for 4 hours
B & B brickettes with sprinkles of mesquite wood chips
Sauce as you like it (I made a blend with Stubbs, ACV, paprika, Heath Riles Honey rub, Cayenne pepper.
Threw in some squash and we added some Bush's beans and smashed taters.
It was delicious. The heat is miserable around here right now but to me nothing says Summer Time like grilled BBQ Chicken!
