whipped up a small batch of chicken kefta sausage  normally they are on kebab skewers but i thought why not a sausage?  so i whipped out the old sausage stuffer,   came out real nice very flavourful  and super moist.  would prob serve them with a tahini style sauce  might not be everyone's cup of tea. but hey i suppose almost anything in sausage form is good. i think next time ill smoke them first see how they turn out prob even better  with a nice smokiness   to them as well 



 
That looks really good to me!! Nice job! I have been thinking about doing some sausage, just never done it and I don't have much of an idea what I need.. For sure I think a sausage stuffer? I am open to any suggestions on what to get to get me set up.. I have the smokers to do it.. Just really need input on the items I need to prepare it.. Points to you on the cook!!

well just starting off  id go with something not too expensive just too see how you like it.  and if you enjoy making  sausage  then def invest in some better equipment. if you have a mixer like the kitchenaide one they have low cost attachments  you can buy for making sausage  that can grind the meat and has stuffing attachments

  i used her recipe for the kefta  and adapted it for the sausage.  ive used a couple of hers before  for hummus  etc they are great i just added a little more fat for moisture then the kebabs

I have some lamb in the freezer right now.  Planning on making kefta sausage with it.  My wife is Lebanese, so she will appreciate it.

nate07, start up a thread and I'm sure you will get tons of input.

For starters I would suggest a decent grinder like the works well, does NOT get hot, has ALL METAL gears, and doesn't cost an arm and a leg, so $120-$200 is my guess.

A sausage stuffer, I would recommend one that claims to do at least 7 pounds which will in reality do more like 5 pounds so you can do a 5 pound batch in a single loading.

Mix your sausage in a big bowl and worry about upgrading your mixing setup as you need it.  Once you start regularly going over 10 pounds of sausage then you will likely want to upgrade but under that and you will be fine with a giant bowl or meat tote tub.

This is some food for thought but feel free to start another thread and again you will get a ton of good suggestions :)
