Chicken Enchiladas

Making some chicken enchiladas today.

First batch is goin in the freezer.
Shreded chicken, add some taco seasoing to the chicken and toss.

Add some enchilada sauce and mix in well.

Now fill the tortillas and roll.

Place in pan, i put enchilada sauce on the bottom with cheese.

Cover with sauce and cheese. Now this batch is going in the freezer.

For eats today im making enchilada cassarole. Same here i put sauce on the bottom.


Lay the tortillas on the sauce, you dont have to cut if you dont want.

Layer chicken, cheese and some sauce. Repeat this until you have what you want in the pan.

Now in the oven at 350 for 30 mins covered.

We do enchiladas all the time Rick & yours look fantastic!
I think my favorite is onions, cheese, & shrimp!
But I have about 8 lbs of King crab in the freezer so that may be the next enchiladas we make.

well whats in the season bowl?? i have some large turkey thighs i'm gonna rotisserie , i dont put the rod thru these and put one on each side of forks only overlapping about a third n tie with baking rope. i need a better recipe for the seasoning for enchi's.
 
Two tasty meals! We went through ours way too fast! We'll make another casserole style on again soon.

SmokinAl SmokinAl my favorite enchilada is enchiladas de cangrejo (Dungeness crab enchiladas). So good. I'm sure your King crab ones will be great!
