Chicken enchiladas-Epic Primo

About 2 weeks ago there was a BOGO sale on whole chicken. I spatchcocked one and posted here. It was simple, a week later I grilled the other but injected it with garlic butter. It was great but leftovers... I picked it clean and in a bowl it went, skins and all. Chop chop chop

I mixed it with a half can of enchilada sauce, 3 garden fresh jalapeno, a blop of sour cream (only the best Daisy), 1 cup of melting cheese, cayenne pepper, and salt. Already it's a great chip dip! This is our filling.

I gave the fresh corn tortillas a good dose of sauce and zapped them in the nuker to warm them up and let them set to survive the rolling process.

I fired up the Primo and let it come to about 350°f. While this happened I made the enchiladas.

Drizzled the rest of the sauce over them, then added some cheddar shreds and covered with foil. 40 minutes, then pulled the foil and 10 more minutes. "Money dude". What a way to use leftovers!

Too late :emoji_laughing: but maybe nextime.

Every single time I think I'll whip up enchiladas I say to myself, "roll e'm up and bake e'm. Quick and easy". But 3 hours later....

I wanted to add, I got away doing the corn tortillas the way I did due to extreme patience and the fact that they were bought fresh and hot ( a different beast ). The absolute best way to prepare them is a quick dip in hot oil.
