I fixed the first link... but I will repeat here...

I would use the small white corn not the big yellow....
and I added 1/2 the jalapeno and scallion to the filling and added the remaining to the sauce after I put some of the sauce in with the filling.
Also I added some grated cheese to the sauce

Four month ago I didn't know what an enchiladas was. Now I have to make some. Thanks for the recipe Zippy. I really like your posts, but at the same time I hate them. Every time I see your forum name or handle the phrase "Zippy the bush Kangaroo" pops into my head, and it takes an hour or so to get it out(for those of you that are younger Zippy the bush kangaroo was a television show in the late 60's).
