Cheap turkeys and good results

I bought a frozen turkey the week before Thanksgiving and it was the driest, leanest most disappointing turkey I have ever encountered. I roasted only a small portion and had frozen the rest. Short story is that I ground the breast and thigh meat and combined that with an equal amount od pork 50-50 trimming and made hot smoked Polish sausage. http://www.meatsandsausages.com/sausage-recipes/polish-hot-smoked

Notice the little bright orange spots in the mince? I grind a carrot to push the last of the meat through the grinder.
