Hi folks. Robert (Rowdee) here. Im from California and living in Rio De Janeiro Brazil. Retired from 35+ years in construction and own an English and info/tech school here with my wife. I love to cook and Im gearing up to open a biz here selling fish tacos (San Diego style)  and later, smoked pulled pork sandwiches. I have great hope for this since cooking isnt exactly anyones strong suit here. Food is very boring. I also do things like make my own Italian sausage. I will be marketing that here to restaurants and pizza places. How can you have an Italian restaurant or a pizza place without Italian sausage? They seem to think they can here. They know pretty much nothing about pizza either. Anywhich, I am wanting to do some smoked meats, as I said, and along with the pork I want to do brisket for pastrami. I am research and studying pretty much daily on this and Im still open to any "good" advice on the subject. I have to start real small. I actually have a Weber gril that is set up to smoke with. The whole interior is designed to do this as well as bbq. I am developing plans for a larger portable "event" smoker/bbq system for when I have it down pretty good. Lots of opportunities here.
