Cedar smokehouse construction

Hello Nick, First of all that is one nice smokehouse!! I've scoured this post to see if there is a supply list and couldn't find one, if it's there I missed it!! Can I possibly get a list of the materials used??

I was browsing smokehouse plans on the Web and like many others here this thread was my motivation to join this forum. I'm a disabled veteran with time on my hands (and a tendency to be unpredictable if I'm not kept busy) and some handyman skills. I like the design of this very much as it looks like a project that I can do by myself. Because Im significantly north of Texas I would have to make some climate related changes. 

What would anyone suggest as an insulating medium? I know I would have to pour footings because of the freeze thaw cycle here in northern Michigan.

Cedar should not be used for fireplace or wood stove due to the poisonous nature of the cedar oils. Those oils make it ideal for storing clothes, since it protects from bugs. Why is cedar being used for a smokehouse? Won't the oils also contaminate the food?

John, afternoon.... Preconditioning the smoker at elevated temps. will drive out the volatile oils and over time, the smoke residue will "seal" the wood, so to speak... same with pine and other woods that contain resins.... It not perfect but what's a guy to do...

John, eastern cedar and western cedar are two totally different woods.

Red cedar (eastern cedar) is used for closets  and clothes.  It also makes awesome fence post.  Bugs will not bother it and it will never rot.

Western cedar is awesome for cooking.   Western cedar planks are the only way to grill any fish.  Awesome flavor from the wood goes into the fish.    A smoke house of western cedar is a great choice.   It also will last many years because it is very resist to weather.

Just though I'd let ya know your smoke house is on pinterest... I fallow Steven Rinella from Meat Eater on the sportsman channel... This weekend I noticed a pin he (or someone on his publicity team) posted of a good looking cedar smoke house... took a closer look and I thought Hey I've seen that before!

Congrats on having a following out side of the Smoking Meat Forum... and great work on the smoke house.
 
I found this Smoke House build today. I have read through all the posts. Learned a lot. Nice build and you should be proud.

Couple of questions:
1. I can see the need for using cedar on the outside for sure. It looks like fir studs could be used for the frame though except for the sill plate. Any issues with that?

2. Would it be beneficial to have a damper at the chimney for more control?

That's a great job on your smokehouse Nick!  I have started one myself and without seeing yours first, mine is quite similar but a bit larger.  I will start a post and add pics when I get them uploaded and get a little time.  Yours turned out fabulous, congratulations on a nice project.

Do you have a parts list on this project it would go a long way in helping me determine when I will be able to get this up and running.
 
Hi, I really like this smokehouse. I would like the measurements of the wood frame. From the bottom plate to the top plate, and from the top plate the tip of the roof. I've done the block work so far and want to start the framing. Thanks.
 
Just a suggestion for you ! Simple fix put a piece of flat metal across / on the top of the block rest block on flat metal not a good idea to have block resting on pipe ! Nice job over all ! Above the pipe opening I added a pull out tray that I add ice too as an added cold smoke benefit ! Happy Smoking
