When I ‘registered’ my 18.5 Weber Grill, I opted into periodic product updates from them. Those updates also included weekly recipes – one of the first was for planked salmon.

Soak the plank, coat with evoo, salmon skin side down, spread with a little mustard, add salt, pepper, and a little brown sugar. Grill indirectly for 20 to 25 minutes until the internal temperature is about 135.

Last nights dinner was superb.

I 'borrowed' two of the four pavers that hold up a grate in our chimena. I put them onto the charcoal grate about the width of the weber chimney parallel to each other. Half the charcoal went behind one and the other half behind the other. I used briquettes for this one - their uniform size makes indirect cooking easier.
 
The package called it Steelhead - I looked it up and found this. That's why I called the post steelhead salmon.

Salmon, trout, whatever - it was delicious. We have another filet in the freezer.
