The Cascina salumi is being cut, tasted and vac seal for EQ.
EQ is equalization of any remaining liquids through the salumi.
I get asked how much weight % did they lose. Dont know as i go by feel.
This one is the chub i rolled in crushed korean red pepper.
Rolled in red pepper flakes.
Vac EQ for a few weeks.
