Work on your draft, it will be fine. Try extending the exhaust pipe or add the extension as mentioned in the post #5, both will help with the draft. When cold smoking it is important to get a draft started. At times, I have to apply a little heat in the smoker itself with a torch in order to get it started.

Oh, yeah! I'm planning to build something like Pop's smokehouse before slaughter time this fall. Meantime, I have about fifteen pounds of Polish sausage for my next smoke.

Absolutely! I appreciate the advice, I wish I could have figured out how to separate the AMNPS housing from the smokebox, but I was worried about setting the housing afire. I will use a mailbox or something similar on my bigger, permanent build.

You will be well rewarded with a much cooler and cleaner smoke. While you are thinking about your new build, keep in mind, the further away your mod is from the smokehouse, the cleaner and cooler your smoke will be.Absolutely! Depending on funds, I may be able to build a small covered building combining the smokehouse, storage for my butchering equipment, and if I can stretch the money far enough, a small walk-in cooler. I really want a permanent setup for my self-sufficiency activities, in a part of the property that my livestock and dogs can't get to. Power and water are also musts, so this is likely to be a pretty big job. I will start a new thread once the money is in place, and get lots of input here on design.

Food for thought: Not knowing your situation as far as placement goes, if your setup cannot be sheltered or in the shade, you might consider an underground feed.

You should go for it! Even with the retrofit stack, I have about $12 and an hour in the box build. I bought the AMNPS to use in my gas grill, and got hooked, but even if I had to buy one just for it, I'd only have $46 in the project. I saved nearly that much by curing and smoking my own bacon, rather than having a local butcher do it for me.
Good looking build. Bacon looks real good. I've got one of these on my to do list.
We have had a record season for snow here in Kentucky, most of it in the last three weeks. I know you guys put in long hours, stay safe!
I have an AMNPS already I bought for this reason. Haven't used it yet. Still need to research cures and that stuff. Been getting too much snow the last 2 months and I drive a commercial plow/salt truck. Plus I'm building a new "T" style drum smoker in my spare time. My wife would flip if I started another project before that one is done. She's good about my projects as long as its one at a time.
