Brined the turkey for 24h, washed, dried off and let sit in the fridge overnight.

Looks good. Love the color you got on that bird. My local store has bone in breasts on sale this week and one of them is destined for the rotisserie this weekend.

Thank you. We all like the sprouts.

The board had: duck and lamb prosciutto, cappicolla, a type of lardo - all smoked so far. Saucisson sec, duck rillette, vegetable spread (eggplant and pimiento peppers), cold smoked coho salmon, hot smoked trout.
