The Mrs and I just returned from a vacation to Glacier National Park. While we were there we bought some Huckleberry Preserves and BBQ sauce.

The Jam gave me a idea for breakfast. I gently fried some homemade hot smoked Canadian Bacon, toasted the muffin, made a egg and added a slice of cheese with a nice layer of Huckleberry Preserves.

All the flavors in the breakfast biscuit was awesome!
Mickey Dees has nothing on this biscuit:)

We love english muffin breakfast sandwiches in this household. That looks great. I’ve got a canadian bacon curing right now and am now even more eager to get it smoked up and on the breakfast menu. Two thumbs up.

Lookin' good.I am eating a sausage,egg and cheese biscuit right now.Homemade sausage and biscuit.
I need to make more CB.I had a freezer take a dump a few weeks ago.CB,pastrami,roast beef,GFB...all kinds of stuff -gone:(

Now that really looks good. Do you use a ring to cook the egg in?

I crack the egg into a small Pamper Chef glass bowl and stir it just a bit to keep some of the egg whites ( better color that way).
Then I add a tablespoon is water and stir a tad and cook in the microwave for one minute and 10 seconds and bam a perfect egg for biscuits. After cooking the egg work the edges and it will slide right out.

Definitely a fine looking breakfast. I’ve got about 5lbs of Canadian bacon curing right now but unfortunately it’s still got 7 or 8 days to go. Seeing this sure makes me wish it would hurry up!

I’m right with you! I’ll be starting 8 lbs Monday to make sure we have enough before deer season:D

Hard to describe the taste of Huckleberrys. They have a unique tartness and they can’t be domesticated. They only grow in the wild from what I was told.
I also came back with some Huckleberry BBQ sauce and will be trying it this afternoon on pork ribs.
Google Huckleberry Haven for all the product made from this wild fruit.

Huckleberries grow wild all over Pike County, PA, but we always called them Wild Blueberries, but I was told they are actually "Huckleberries". We hunted & fished up there all my life, and I feasted on them many many times.
Wild ones are only about 3/16 " to 1/4", with a 5/16 berry being a Giant.
Have to be careful when they're in season, because you might have to fight a Bear for them----And I'm talking about a Real Black Bear.

Yes on the bear spray!!! The first day hiking I didn’t have any spray but the Mrs made sure that I bought some for the next day;)
