can you rub to early

hi everyone i was jus wondering if puttin dry rub on meat too early could ruin the flavour instead of making it better.

any thoughts would b great
 
My opinion is yes, you can rub too early. It really depends on your personal tastes and the ingredients in the rub. For example, I have a poultry rub that includes dill. If I rub it 4 hours or less before putting them on the smoker it is perfect for my tastes. Any longer and the dill becomes too pronounced. The longer a saltier rub stays on, the longer the salt has to get into the meat and make it too salty.
 
This is really a matter of personal taste. I suggest you try different times & see how you like them. I like the overnight in the fridge time frame. First of all you have all your prep work done the day before, so all you have to do is fire up the smoker & throw the meat on and it does seem to take on more of the flavors than if I rub & smoke the same day. Of course like Solar says, you don't want the rub to overpower the meat.

Alot of folks here like to rub their meat the night before and then smoke it the next day. I do have a question thou. what is 2moz???? oh I see that you are overseas but I still don't know what 2moz is???
