Can I freeze ABT's

Greetings once again from the Great State of Arizona. Every year I go to a gold prospecting outing 'bout 8 hours drive from here we have a potluck dinner and such on saturday night. This year I want to get there thursday afternoon. My abt's are always a big hit at the potluck so here is my question. If I cook the stuffing for the abt's stuff them and wrap them in raw bacon can I freeze them, keeping them frozen in the cooler until it's time to go in my smoker (yes, I take that too.) or will this be a bad thing? Thanks for any suggestions.
 
Sure you can. They'll just be a bit more "mushy". Just be sure to put them back on the smoker to firm them up a bit. I think they'll work out great!
 
Just curious, what do you put in your ABTs for stuffing that requires cooking?


If the stuffing would normally cook as the whole thing is smoked, I might suggest that the whole ABT be pre-made and frozen and then cooked/smoked later.


I wish that there were a good way to keep ABTs for the next day, but fresh off of the smoker seems best to me.
 
I would just make sure that stuffing is cooled before you wrap the bacon around it. I think they will be fine as peppers are going to get a little soft cooking them anyway. Make sure you have a little hole in the bottom of each pepper to let some of the moisture escape.
