'Tis the season for Goodwill , so if your a fan of Goodwill it will be prime season with the new holiday gifts , and people getting rid of old stuff .

I stopped in last week . I seem to go right to a spot and have a " That's mine " moment .
That's what happened this time around . This thing is like brand new . Little to no use .
Marked " 89A 12 1/4 X 10 1/4 X 2 1/2 " When I looked it up it said " Lasagna dish / casserole "
If it was used , it wasn't used much .

No bake on stains on the handles .

Local store had some good sales end of last week . One was frozen potato items .
So I stocked up on fries , hash browns and tots .

I've seen this " Hot Dish " on cooking shows . I think it's an upper midwest thing ? Fueling Around Fueling Around
I saw the original ( ? ) with mushroom soup , peas and ground beef .
Wasn't really feeling that , but found one that was Mexican themed .
Came out pretty good , and the new dish held a full bag of tots .
Not a complete write up ,
Ground beef
onions
green chili's
Red bell
garlic
yellow corn
Black beans
Taco seasoning
Red Enchilada sauce
Shredded cheese in the mix .
Pan it up , top with tots .
Bake it off until it bubbles and tots are crisp , then add more cheese on top .

Had some Knorrs cilantro lime rice . Little sour cream on top .

Pretty good , and something different for us .

Forgot to say ,,, dish was marked $4.99 . Green tag day got it down to $4.35 at check out .

Pan and casserole both look great.

I'm liking your Tex Mex style. Roasted corn with elote sauce

I grew up on hotdish casseroles. Monthly Ladies Aide meal at church, funerals, weddings, and potlucks all featured them. When tater tots got popular it supplemented the traditional scalped potato dishes.
Our varieties were ground beef or beef and pork. Cream of mushroom soup (some also used cream of celery soup, but never me). Green beans (frozen not canned). Cheese of choice.
I like more potatoes, so I loosely stack the tots on end. The cheese sprinkled on top melts down

Pam and I donate a lot to Goodwill. If there is a kitchen item I'm looking for, I like to look there first. The last thing I picked up was a Britta water filter pitcher for the coffee bar downstairs.
Delicious looking casserole, Rich.
That casserole dish look like it would be perfect for a batch of Funeral Potatoes also. Yum!

BOY HOWDY DO THOSE BRING BACK MEMORIES FROM ANOTHER ERA! I BELIEVE MY MAMA USED THE CORNINGWARE "CORNFLOWER" EDITION FOR JUST ABOUT EVERYTHING THAT WENT INTO THE OVEN. I HAD A FEW BUT TOSSED THEM WHEN THE LIDS GOT LOST AFTER A FEW MOVES, USE PYREX THESE DAYS.

Nice looking casserole. Great for this time of year when things are a bit cold. I like the Mexican lean, as it spices things up a bit without going crazy on the heat. Good job.

Appreciate the comments .

I was thinking you would have some info on it . My Son said the same thing , " more potatoes "
I liked the mexican twist on it . Not against the cream of mushroom at all . Green beans sound like a good add .

I mainly look for Corningware or pyrex . Revere ware pots and pans too . The stuff lasts forever , and people get rid of it .

I have several sizes and styles . Fare amount of lids too . I use the heck out of them . Great for holding stuff that comes off the grill or smoker early , then just into the fridge with any leftovers . I have a bunch of the Cornflower pattern .

I like the Mexican lean,
Me too . Used some of the leftover for lunch today .
I think I found my new burrito filling .

Did you also sprinlke taco seasoning on top
No . You could , but between the seasoning and the sauce I don't think it needed it .

That might be black pepper . There’s something on there . Good eye . I think its pepper . Fresh cracked of course . lol .

For crisper tots, split the filling into 2 dishes to make it thinner. Lay the tots the traditional flat method.
The canned cream of soup is more a bechamel thickener than a flavoring agent. I make my own soup and supercharge it with hearty mushrooms.

Creative!
Add some scrambled eggs and the perfect breakfast burrito

Nice score Rich! Some of those are worth a,lot of money. I love Goodwill! That casserole looks and sounds delicious.
