Good morning everyone, I fired the smoker up this morning at 530. Took about 45 mins to get up to temp on this absolutely gorgeous morning in WV

Today I'm cooking 4 Boston butts, 2 picnics, 6 racks of baby backs, 4 chicken leg quarters and a few pieces of rope sausage.

The weather is supposed to get pretty nasty this afternoon so I'm gonna try and get the ribs, chicken and sausage knocked out by noon.

    Gotta love that TBS

I'll try and post a few updates as the day goes on and I'll definitely take alot more pics. Thanks for lookin!

Everything turned out just as planned. I'm going to have to start ordering more food in the future, I had a few neighbors come up to me this time and ask if I was selling que. So I got rid of an extra 3lbs of pulled pork. The wind got me a few times during the process, making my fire go completely out. It was just the challenge I needed to prepare me for this Memorial Day cook. I've definitely got a good grasp of just how much I can do by myself that's for sure, completely exhausted today lol

That looks like a awesome cook! [IMG]I believe we all need a challenge now and again to hone our skills. It may come from the weather or something else. I cooked for a employee appreciation party last summer of about 75 people. It was at a state park that would not allow me to bring my own wood in due to wood restrictions of invasive wood bore weevils. So I had to buy my wood on site. Amazingly they had solid oak. But it was very green and wet. I struggled with the fire all day. I was splitting wood into slivers just to get it to burn. But I made it work.

Just like your struggle with the wind it makes you better and you build confidence. As they say what doesn't kill you makes you stronger! [IMG]

Couldn't agree with you more! Great to hear other people's experiences with being challenged!
