Taking advantage of a warm January Saturday tomorrow. I got three 8# butts and 2 slabs of baby backs. Seasoned all up with SLAP'S BBQ perfect blend rub.

Meat Mountain


Unfortunately I forgot to snap a pic of the ribs.

All this will go into an MES 40 with my a-maze-n pellet smoker with maple pellets.

Looks like we both had the same idea - my meat mountain is 5 lbs of country style ribs, one 3-pack of st. louis cut ribs, and 2 pork butts.  Looking forward to see how your smoke(s) turn out.
 
Finished 40 lb leg quarters and waiting for the butts to come off. Im tired been at it since 5:00 pm yesterday with prep and cooking since 10 am today. Ours is a labor of love, and tasty beverages.

Got these on at 0700. Smoking at 235 with apple chips. I couldn't get the pellets to stay lit. I've only had this problem with the maple pellets. Anyone have this issue?
 
I will be doing a 7lb butt tomorrow morning. Everyone taking advantage of this beautiful weekend. Atlanta here how about everyone else?
 
Sorry for not keeping this up. It's been a long day. The three butts finished about 3 hours apart from one another despite only being within a pound of each other. Ribs were okay. My wife and sister in law had baked sweet potatoes and topped them with pulled pork and BBQ sauce. I just had sammiches and slaw. I saw I made the carousel and thought I better add some pictures.

Husker those are some great looking ribs and butts!      The cold slaw looks delicious too.

The slaw was a big part of the reason that I like the look of your sandwiches.  I'm with Bauchjw,  "gotta recipe"?

1 bag of slaw mix (from the produce section)
5oz mayo
1/4 cup sugar
1oz apple cider vinegar
1tsp kosher salt
1tsp coarse ground pepper
1/8th tsp celery seed.

Mix it all up and let it sit for a few hours!
