Got a 12pd butt going on the Masterbuilt gas house smoker with a little maple and cherry chunks for flavor. 6 hours in and getting a decent looking bark. Thinking this may be a loooong cook. Bryce and Lesa are making chocolate covered pretzels on this cold rainy Saturday. Thanks for looking.
Well heck! The wife came in with a ham for me to cook you know “since the smoker is hot and it’s gonna be a while for the butt to finish”. So a quick coat of Honey, Meat Church Honey Hog, turbinado sugar , and brown sugar. Pics to follow.
13 hrs later butt is done. Probe tender all over at 202 degrees. Nice pull back on the bone. Wrapped in towels and into the cooler to rest for a while. Wife’s ham came out good also. Had to fight her off of it to get a pic.

there ya go. Even after a few hours wrapped in towels and in a cooler it was still almost too hot to hand pull. The bone came out clean and the meat was super moist. Got it in a crockpot on warm setting. Gonna be some good eating later.
