Anyone cubed brisket into 1” cubes before smoking? Does this dry it out? Looking for heavy bark on trimmed meat for the finish.

Really bad idea.
Only cut of meat that I cube before cooking is pork belly.
And IIRC, I once cubed a really fatty pork butt and cooked as burnt ends.
