just did some burnt ends tonight by throwing my cubes (1/2 were from the point and 1/2 were from left over flat) in some au jus from the drippings, lightly season them with some more rub that initially used when cooking, smoke for about 30 minutes or so at 275* to dry them a little bit. Then I start coating them with my BBQ sauce every 30 minutes for another 90 minutes or so.

 
Mmmm...looks good from here.
We just did burnt ends Saturday from the leftover brisket point from the 4th...IMHO that's the very best part of smoking a brisket.

How were they? They look superb.
They were great! I enjoyed them a lot! Tasted really good with a Stella Artois Cider. I am getting the itch to another brisket this weekend. When I told my wife, she just rolled her eyes.
