dip-sh#t question here. did you add fat? is the fat just from the butt? I could just be inexperienced, but I thought fat is what held burgers together/ go easy on me.

Ryan has you pretty much covered. The hipshots hold form beautifully as they are pressed. I cut a lot of fat out of the brisket burgers and form them by hand, so yes, I am a little more careful with them on the flattop. RAY
