building electric smoker from uninsulated bread proofer. what to wrap it in...

Hello - New to the forum... As the title said I have a bread proofer, I am going to insulate it with mineral wool. I am thinking I should be able to get 2.5 inches around the sides and back. The front/door might remain uninsulated but maybe cover with a "blanket" if need be.

So to get to the question my plan was to use roofing tin to just cover the insulation but after further research that is galvanized... I am guessing this would be a poor choice of material even though the temps on the inside will be 250 or less and the outside should be near ambient temps?

Thoughts?

if we are thinking it isn't worth the risk I am open to other suggestions?

Next thought would be wood, though I read that can dry out and combust at temps around 200. Wood adds a lot of weight and I argue if we dont think temps will get that high then wouldn't that make galvanized a same option too?

Don't use galvanized metal.

Why not line it with fireproof drywall or whatever that stuff is called.
Thanks for the reply. the inside is aluminum like the picture below. I am just wondering if after i add the insulation to the outside of this "box" what should I then cover with the insulation with.

Personally, I would worry about insulating it.
If anything you could screw in some hooks around the top edge then hang a welding blanket from the hooks. I wouldn't even do that though, I'd use it as is, but I'm in Cali. we don't get cold enough to effect a smoker.

I've used uninsulated Lure Jensen electric smokers for many, many yrs with no need for insulation whatsoever.
