Brisket

Haven't done one in a while but my brother is in town and my niece is being married in two weeks. Tonight is the bachelor party so I asked her if she was busy. Brisket beat her previous plans. Started this morning. Did a complete hack job trimming but it was after happy hour with my brother. Got side tracked earlier having to take my son to the doctor to get his wrist looked at but that seems ok. Almost there.

Seemed like a good excuse to get the family together before the big wedding. First family wedding since mine 15 years ago.

I sent my niece home with admit five slices. Her brother, my nephew, is a 6ft 2in power lifter. I sent him home with some too so he didn't kick my ass . I saved about two slices for a guy at work. He tried one brisket and tossed it out he says. I told him grab one and a case of beer and let's go!

Looks amazing. I'm jealous. I've tried 3 briskets so far and none have turned out for me. I just can't seem to produce a moist flat for some reason.
