What is an average price for a good brisket? Was looking today and seen $61-$77 8 to 11 lbs.
Is this normal?
 
Prime packer at Costco today was $3.99# they have been as low as $2.99. Do you have a restaurant supply store like GFS they generally have choice for a decent price.
 
I have checked multiple times at my local Costco and they never have had packers. Flats only. The only place anywhere near me that had packers was a butcher shop at 5.99#. $77 out the door. At least he has 6 to choose from.
 
We have a couple GFS near by, going to check there.
What is the difference between flats and packers (if I said that right) I am new to brisket cooking/smoking.

Flat is the wide rectangle end (kinda flat looking)
Packer is s flat with the point attached. The point and flat together are a whole brisket aka packer brisket.

You know we all have to agree on this. The high prices on any of the smoking meats,now have to be because of all of the cooking and smoking shows out there. Fricken corn beef brisket going for $20 to $26 each. I used to pay $6-$10 for a good size one years back.
 
I can almost guarantee packers at our Wal-Mart store is closer to $3.69 ' All the places here are about that. If they even sell whole ones.

I was just told someone got a whole packet $35 GFS this weekend. Didn't ask how many lbs.

Ask to speak to the meat department manager at Costco.  They listen.  I had a similar situation at my local Costco.  Tell the meat department manager you want a full packer and you are not happy with their flats only choice.  Also tell them you are reading about $3.99/lb prime packers at Costco in other areas, including Sacramento.   

My wife were ready to end our 37 year membership (Price Club, then Costco) due to the meat department at my local Costco.  Their prices were out of line with the Costcos around the rest of the country.  I basically went there to buy meat, then would spend a small fortune on other stuff too.  When I was reading here about $2.99/lb and $3.99/lb Prime Costco briskets, they were $10.99/lb and higher at my Costco, and were cut weird (lengthwise, not flat/point).  We stopped going to Costco as a result.  I shifted my meat and grocery purchases to Winco Foods where I was getting quality and low prices.   

My wife and I made one last trip to Costco this past weekend to decide if we were going to keep our membership or let it expire.   Obviously a lot more people than me complained because the brisket prices are now what I read about here for both Prime and Choice.  They now are carrying full packers and they stopped that weird lengthwise cut.  I was actually impressed with the meat I saw, picking up several favorites to stick in the freezer.

You can make your own corned beef out of brisket, bottom round, top round, chuck, chuck roll; any cut of beef that is inexpensive to your area.  This is corned beef and pastrami I did with a 6 lb. chunk of bottom round that was on sale:

You don't HAVE to use brisket if it is not available or plentiful in your area.

Ohio has zero good pastrami sandwich places. If you can't buy you gotta make it yourself. Just never tried before. Defiantly willing to try
