I have been messing around with different techniques this is about my 4th brisket on this smoker.

Pecan wood every hour with 3 briquettes of charcoal the first 5 hours

Smoked at 250F the duration of the cook wrapped in butcher paper about 4 hours in.

Looks to have gotten a nice smoke ring and was super moist! Flat seemed to have needed more time.

Oh yeah, You did get some color and ring.. that is a shorter time out in the smoke than you normally hear of. Looks juicy.
