smoked my first brisket today...

...was a success all around

removed the fat cap and most of the fat i could, then seasoned with some salt, pepper, paprika, garlic and onion powder and some brown sugar applied after the rub.

cooked for 3hrs @ 225-250... until she read 140ish on the i.t.

wrapped in foil...2hrs later she was reading 190-195.

7hrs after i first put it on the smoker...she ready to be sliced up.  for being a "select" this was still some moist brisket and i even used the juice from the foil as a "sauce"

made one hell of a sandwich and fried up some french fries and okra...

...note to self: do not fall asleep after eating a hunk of meat and fried veggies.  ...the hunk of meat and fried veggies will be in your throat when you wake up.  lol

overall, a success for my first brisket.  i say i need something in the rub that's missing...wifey says it's perfect.  it will only get better with time...and today was awesome!

Joe, that Brisket looks great! You may try adding some ground Coriander and a touch of Allspice. Of course being from Texas you may find the addition of Ancho and/or Guarjillo Chile, Cumin and a bit of Oregano will kick up your Rub. Last summer my wife was not crazy about my smoking but I switched from Hickory to A-maze-N Pitmaster's Choice, Hickory, Cherry, Maple, Pellets and have been smoking just about every week since April. Got to keep the Mrs. Happy...JJ

omg,  jimmyj it was freaking awesome...  i must've eaten a pound of meat my damn self....holy cow.! 

even the lean section of this "select" cut was tender and moist.  ...if they say the brisket is the hardest cut, then i got this shtuff licked, i say.  i just got to get this rub down.  thanks for the advice on the coriander, i have some in the cabinet but can't recall what i've used it for in the past (maybe it's the wifes?).

if i could get my flavor dialed in, i'll be money.

just cubed up the point and tossed it in with some van camps p&b, some mustard and some white and brown sugars.  got a awards ceremony for the son's swim team and we're supposed to bring a side dish.

was a hit!

...added some large chopped onion pieces to the top and foiled it in the oven @ 350f for an hour and 15mins.  ...probably would've been an hr if meat wasn't from the refridgerator.  

good stuff!

First time brisket looks great and must have tasted even better, but where the hell is Cornhole, Texas?  LOL.  I'm from Texas and there are alot of towns I have never heard of and Cornhole tops the list!

cornhole is my loving name for conroe...  lol.  it used to be cornhole, but now it's like tx-90210;  lots of oil companies around here now.
 
Yeah, from Houston out past Conroe, the I-45 corridor has really grown up over the past 20 years.  I like the Conroe area better than some of the other towns around you though.
