smoked my first brisket today...
...was a success all around
removed the fat cap and most of the fat i could, then seasoned with some salt, pepper, paprika, garlic and onion powder and some brown sugar applied after the rub.
cooked for 3hrs @ 225-250... until she read 140ish on the i.t.
wrapped in foil...2hrs later she was reading 190-195.
let rest for 2hrs...
7hrs after i first put it on the smoker...she ready to be sliced up. for being a "select" this was still some moist brisket and i even used the juice from the foil as a "sauce"
made one hell of a sandwich and fried up some french fries and okra...
...note to self: do not fall asleep after eating a hunk of meat and fried veggies. ...the hunk of meat and fried veggies will be in your throat when you wake up. lol
overall, a success for my first brisket. i say i need something in the rub that's missing...wifey says it's perfect. it will only get better with time...and today was awesome!
