Loving the flavor... lately, I have stopped using the Texas crutch. I've been pellet smoking lately, so starting with low temps (190) to get more smoke, then up to 250 once I hit 160ish IT. Every so often I am adding a little spritz and additional sprinkles of my rub.

I like the idea of leaving it in the smoke setting until the IT gets to 160, I'll have to try that and see what the end result is.

What pellet did you use for your smoke?

Protein looks great!
 
For this smoke I used GrillaGrills pellets. I find them to be the highest quality of those I have used. However, I do believe they are putting their name on them and that they are actually Lumberjack pellets. I mixed Cherry and Pecan.

Truth be known, I bet most pellets get the name put on them as they are bagged.

My Dad use to jive my Uncle about gasoline and buying name branded gas.
One time we were all camping at the Salton Sea, back in the 1960's when it had water in it. Uncle Andy took his family for a drive to see the sights. (Hey, desert is desert. What's to see?)
He came across a rather nice paved road heading East in the desert, and took it. He kept passing fuel tankers heading West on the road. Finally, he came to a huge refinery.
And lined up were trucks of every filling station brand there was. ALL filling up at the same refinery.
He came back and told my Dad Branded gas my ass! It all comes from the same refinery! :D

I liked being able to mix pellets, and I still can. I have Hickory, and some Pitmasters Choice which is made blended, and some Oak 'dust' I made from a 4X4 of oak I had with my jointer, OH, and some Alder pucks left from my Bradley.
Kinda depends, but I like the Alder and Hickory still for my fish smoking.
I lay about a 1/3 high strip of dried pellets, then fill with Alder or Oak 'dust'. The pellets act like a fuse to keep the dusts burning.
I think I still have about 147 years of smoking fuel left now with the AMNPS. :rolleyes:;)

I have found that some brands offer less aroma (Cabelas) and some offer great aroma, but will cause a flame out at lower temps (Traeger). I believe some, like Traeger, are adding oils to the pellets to increase aroma, but causes other problems. Costco sells a Traeger pellet that consistently causes flame outs in my pellet smoker.
