Bought 5 briskets when they went on sale 2-3 weeks ago....time to cook one. I put it on at midnight and it was done @9am. Drove it over to the station, popped it on the oven on warm, then crashed for a nap after watching the smokehouse all night. Twas good....real good.

Thanks jcam! T'was juicy, like butta....they were pacing the floor when I showed back up at the station around 5 o'clock!! LOL!!! They had to smell it all day....absolute torture!!

Thanks noboundaries! That's what I told them....I've had briskets go 21 hours before they were ready, and some that were finished @9 hours. Some were tender @198* while others had to go to 207*F....just got to develop a feel for it and judge the meat.....

I do mine on a 26 " kettle . Heat and smoke runs out about the 9 or 10 hour mark . Wrap and finish in the oven gets the best results for me , but you're right . The smell is torture .
 
Man that looks good. There is a firehouse and police substation 'bout 10min from the house. Been thinking about doing some cooking for them. Was there many hoops to go through to take them food?

I doubt that there would be any hoops to go through but I don't know what kind of an area you live in. I do know that it would be greatly appreciated, especially the way things are going in our nation. From time to time we have people drop off bottled water, gatorade and food at our station. It certainly picks up our morale knowing that there are people out there thinking about us.

The last building I did before I retired was a Firehouse . I always had pride in my work , but this one was extra special . I did the roof , the inside and the exterior trim . All that " white " trim and siding on the outside I personally installed . Also did the kitchen and the upper patio area . I ran the metal studs and drywall finishes . Had a crew of 10 , but wanted to work on it also . Those Fire fighters were great guys . It w a honor to do that for them .

Nice job. That is a heck of a station Chop! I'm positive that the firefighters that work out of there are extremely proud of their station.
 
Good looking brisket Keith. You certainly do take good care of the fellows at the firehouse and I'm sure they appreciate it. Kinda mean to torture them all day though with the aroma but it'll get the excitement built up :emoji_wink: you're a good guy doing what you do for them buddy.
