Thanks nb, takes quite a few smokes to become a smoke whisperer....I still have my screw ups, but luckily they are getting fewer and father between.Yep, and it's the true smoked beef whisperer that knows what that hunk of beef is telling you. UB1!

I do mine on a 26 " kettle . Heat and smoke runs out about the 9 or 10 hour mark . Wrap and finish in the oven gets the best results for me , but you're right . The smell is torture .
My cousin is district captian on shift. He is like a brother to me and we've been cooking there at the firehouse for 20+ years. We rotate around....they invite me over to eat, and I'll cook for them at least 4 times a month....Man that looks good. There is a firehouse and police substation 'bout 10min from the house. Been thinking about doing some cooking for them. Was there many hoops to go through to take them food?

Thanks Robert. They take care of me too. Every now and they do steaks and someone always buys mine....they never let me pay....though lately we hve been doing a lot of sous vide deer steaks-those are to die for!Good looking brisket Keith. You certainly do take good care of the fellows at the firehouse and I'm sure they appreciate it. Kinda mean to torture them all day though with the aroma but it'll get the excitement built upyou're a good guy doing what you do for them buddy.
