Picked up a couple briskets to do at work, 1st one weighed in at 12#, trimmed it up rubbed generously with SPOG, put it on the pellet pooper this morning at 6 am. at 225F

I put the probes in it after 3 hrs to monitor,  at around the 5th hr the stall starts point and flat 167 and 178 each, will keep an eye on it and update later.

Well with a very hectic couple days the brisket turned out great according to the guys that devoured it...lol I also did burnt ends and held them back for a few of us to enjoy first.

Cranky I am working in the Brazeau county, South of Drayton Valley Alberta, kind of lucky I am a couple hrs from home, to far to go back everyday but close enough to visit or have the wife out once in awhile.

Looks great.   I need to do another one.
