As the title suggests - hoping to get a close approximation for a 5lb brisket tomorrow.

Considering cooking at 230*, foiling at 165* and pulling it at 203* IT, rest for an hour and then devour.

I suspect it will be 4-5 hrs till I foil - and then another 2+ hrs to get up to 203* IT.

I'll only open about once an hour to apple juice spray.

One add'l question for the MES gang is frequency of adding wood chips?  I usually add about every 45mins to hour for the first 1/2 of the smoke cooking time.

Thoughts?  Any inputs appreciated.

At 230 your looking at about 2 hours per pound, so a total cook time of 10 hours.

I would add wood chips when needed until you foil it.

Good luck!
