Well friends Kroger has Briskets on sale for $1.99 lbs in the Knoxville Tn area. 3 fell into my buggy some how or another :emoji_wink: . I was going to just freeze all of them and then this morning had 2nd thoughts. I cut the thin flat end off and seasoned with suckle busters 1886 and the rest with SB SPG. The thin flat end I folded over to simulate a thicker cut of meat. I fired the Austin LX up to 500 and when it reached 450ish I cut it back to smoke #6 while I was rubbing my meat with mustard and the SB. I plan to run low temp high smoke for a few hours then kick it up to 250-300, been awhile since I have done 1 so looking forward to it, going to cook or attempt to cook at a higher temp than normal to speed it up. Wife needs /wants something from Sevierville flea market so I cheat by setting my security camera in front of the smoker showing the temps, My smoker aint remote controlled but I like seeing that it hasn't flamed out.

Not sure what temp it's going to ease down too but I suspect in the 170-180 range due to outside temps are almost 70 and very humid. I probably trimmed 2lbs off but that's ok and part of it.
 
Nice . I have one sitting in the garage fridge . I need to decide if I'm gonna smoke it or grind .

I'll be watching .

Temps are running great as always, have my therm set at grate level on the left end above the smokers temp prob, my other probe is at far end at grate level by smoke stack, got the inkbird 6X and I get them mixed up at times lol

Dangit Chopsaw think your going to make me go back and buy another 1-2 to grind lol, wife told me last night we should get 2 more, the limit is 5 per and I still have 2 allowed

Mike I started looking at " bang for the buck " Grinding gives you some options .
Also , do you have an instant pot ? I did a 2 pound flat in the instant pot for taco meat . Really good .

BTW ,,, just heard another batch of ice drop . That's a magical sound . Lol .

Following for some inspiration! I have a few packers I need to get at too! Can’t wait to see the outcome, great idea on the security camera. I’m going to borrow that!

Well it turned out very good, had some thin ends and sides that I should have trimmed but didn’t, I will stick with a overnight cook and no wrap at lower temps unless time is a issue. Thanks for following along
