Well friends Kroger has Briskets on sale for $1.99 lbs in the Knoxville Tn area. 3 fell into my buggy some how or another . I was going to just freeze all of them and then this morning had 2nd thoughts. I cut the thin flat end off and seasoned with suckle busters 1886 and the rest with SB SPG. The thin flat end I folded over to simulate a thicker cut of meat. I fired the Austin LX up to 500 and when it reached 450ish I cut it back to smoke #6 while I was rubbing my meat with mustard and the SB. I plan to run low temp high smoke for a few hours then kick it up to 250-300, been awhile since I have done 1 so looking forward to it, going to cook or attempt to cook at a higher temp than normal to speed it up. Wife needs /wants something from Sevierville flea market so I cheat by setting my security camera in front of the smoker showing the temps, My smoker aint remote controlled but I like seeing that it hasn't flamed out.
