Just made up my rub for tonights smoke but before I apply it I want to know if I have over-coffeed it. I asked a friend what they can smell the most of in the rub, without knowing any of the ingredients I used and her first answer was "coffee?". So now I'm a bit concerned! Apologies to all Americans - the recipe is in grams.

100g flaked sea salt

80g black pepper, cracked

50g dark brown sugar

40g fine ground espresso medium roast coffee

30g hot smoked paprika

30g kashmiri chilli powder (mild, but full of flavour)

20g garlic granules

20g onion powder

15g mustard powder

The coffee I used was the Italian brand illy, and is medium roast, fine ground espresso coffee.

Looks fine to me. Taste a pinch, it is a Coffee Rub so that should be the most forward flavor with the other complimenting the coffee...JJ
