my blog got hacked along with my google acc and they changed everything. i had to contact google and give them all my info b4 they closed it all down.

To many @$$holes out there to mess things up so dont know if i want to do another one.
 
Okay nice, is it a brine or a marinade?
 
you can use it for either.

I found this sauce couple years ago when i was in Iowa and have just recently found it here in SE GA
 
I've never brined a butt before, didn't think the texture of the meat would allow the brine to absorb the way it does with poultry.

Does it really affect the end product?

Getting the coals and pecan wood going. I added more charcoal to the rest and covered the pecan wood.


Injected the butt with Wickers. Time in is 7:45am  est.

Baste with the wickers at 10am. WSM cheapo thermo dial is at 230. Yeah i know not reliable.

 
IT taken in 4 spots running between 170 thru 179.

Have not had to add any charcoal yet. IT of bullet running between 240-252 depending on how the winds blowing.
