Checking in on the Bresaola. Did a weigh today.

Sitting at 1267g. So far since the 22nd we've lost 12%. Seems to be on track.

YUP, its a waiting game as you know I am sure.
 
Most regular stores don't have them. Your best bet is the big box stores or yuppie Heath Food joints.
Found em on the phone at a yuppie food store. $5.99 a jar. not sure size but 1.49 for the package from ritebrew with more than I will need is fine. And they are here and Im on here now to get the % to get it curing

You might toast them a tad with the other whole spices and hit them for a second in a grinder just to break them up a little. You probably know that, though.
 
If you don't have a Coffee, I mean spice grinder this one is a power horse and it has a stainless grinder cup so it doesn't hold flavors like the ones with plastic cup.

Reminds me I better do a weigh in!
