Maybe spoke too early Murray. Went from 172 to 174 and stalled again [emoji]128539[/emoji]! It's all good though, I'm a patient man [emoji]128521[/emoji].

Looks like you might have nailed it. Is it Wrapped and resting now?

Yes it is! It's so difficult to not just tear it apart right now lol!! Total cook time 11 hours. Beautiful bark and absolutely falling apart!! I had to use two spatulas to get it off of the grill!! Totally happy with my new WSM. Held temp great with little manipulation of the dampers. What a great smoke! I can't wait to taste the result![emoji]128523[/emoji][emoji]128523[/emoji]

I melted some pepper jack over it on a whim
Is that cheese melted on top? I've never thought of cheese going good with pulled pork but I want to try that! What kind is it?

I melted some pepper jack over it on a whim and it ended up being absolutely delicious!! Definitely recommend it.
