Got my butt rubbed,

Got my liver marinade cold,

Time to break in my new WSM!

I'm doing a pre-burn tonight with all the dampers open and will throw the butt on in the morning. I used the Memphis Meat Dust from www.amazingribs.com for my rub and I am going to use white oak and hickory for smoke. I'm really just doing this because the fat content of the butt will help season my smoker and I don't want to do a smoke with garbage just to season [emoji]128533[/emoji]. Still hoping to get some good pulled pork out of it! I'll post pictures when it's done and let y'all know how it turned out![emoji]128513[/emoji]

Pictures,  where are the pics ?

Gary

I like your rubbed butt and liver marinade!
:popcorn Gary and I are patiently waiting on pics

It's 0500 here right now. Time to get my coals going. I'll post pictures as I go.

I just love how my WSM looks next to my performer[emoji]128525[/emoji]! The small grill in the background is an old kettle that I've had for like 20 years. When I got my performer I chopped the legs down and turned it into a fire pit/bean cooker. Works great!!

I'm very impressed with it so far Gary! It's holding temperature great with little adjustment.

Great, you going to have some good eats !!!
