I've never tried breakfast tacos, they look good.
Oh man, they're awesome.
We do the style he showed on his second cook for dinner. Fry up some sausage, then add in beaten eggs and cook it up all together. Throw into some tortillas (skillet heated/crisped if I'm feelin' fancy, nuked if not), then cover with some Mexican cheese blend or some cotija, some hot sauce, cilantro is a plus/minus, if we have it and feel like it.
I love it. I'll throw some dice jalapenos on mine, I think I'm going to make some all up right now. I usually cook up 6-8 eggs, with a half to full pound of sausage (hot J.C. Potter breakfast), then The Wife and I have extra leftovers to eat throughout the week a couple of times, as well.
Easy peasy, super tasty and awesome for breakfast, lunch
or dinner. This morning... I have some leftover roasted poblanos I think I'll throw in, as well as some onion and other peppers, too. The beauty of these is how you can vary them - add in some chopped chipotles in adobo, add some chopped bacon, vary the cheese, +/- cilantro, throw in some diced and crisped up potatoes (maybe from leftover baked taters you cube and fry up), or do them with pulled pork instead of crumbled sausage, add sour cream (I like to mix sour cream and Tapatio hot sauce into a nice spread), add chives, various other accoutrements or additions.
That's what's so great about tacos - the variability is endless!
<edit> Another variation some people like is to use maple sausage. Personally, I'm not a fan of sweet in my breakfast sausage or bacon too much, so I don't go this route, but a lot of folks love the maple. Again - you do you!
