I made some basic breakfast sausage and made a video of it for my You Tube page. Here is a picture of the sausage and you can check out the video if you like. It is pretty basic for the readers of this forum but is directed towards someone who has never done it.

Thanks, DS. I just never worry about being coiffed or well dressed. Something about putting lipstick on a pig comes to mind.

I've made my own breakfast sausage for a while. For anyone who hasn't tried this yet, it's easy!

For the seasoning, you just need salt, sage, and black pepper, and maybe some thyme. You can add aromatics like cloves or coriander, but you'll be wandering toward a frankfurter flavor.

I still haven't dared to add as much salt as I taste in a commercial product. As for the fat, well, if you're frying up commercial sausage and find yourself throwing out a pool of grease that weighs as much as the cooked sausage, you've been had.

Thanks! Your spices sound a lot like Pop's Country Sausage. I love it! I was given a box of Hi Mountain seasoning and it is good too. 

What I don't like about the store bought is they grind it way to fine for me.

I especially like the explanation of easy skinless links. the freezing before packaging is a great idea which I plan to use on my next batch! THANK YOU!

As for the hair, back before I lost most of mine in my early 20's, the mad scientist look was my signature do!

Thanks. The skinless is the way I do all my breakfast sausages now. Although I am thinking about leaving some in bulk and trying my first fatty.
